This is my story of how I am striving to change my family's life, nutritionally, for the better. Here in the deep South Paleo is a foreign word. No one has heard of it, and gluten free is really almost as unheard of...
After reading Gary Taubes enlightning GOOD CALORIES, BAD CALORIES I was determine to change! Armed with my own two hands, the internet (thank God for AMAZON.com), and all those wonderful blogs and podcasts available now, I am beginning my journey.
Please feel free to join me as I try to adapt all of our Southern Favorites into Paleo Appropriate Scrumptiousness!!! (and all Gluten Free) I will try to post all of the good ones, and may even blog about some failures along the way.

Why Paleo? and what does it mean for real???

I have tried to post a Paleo page here on the website to give a crash course in what I believe Paleo is, and why I eat it.
One of my very favorite Paleo Girlies is Sarah Fragoso... She is a girlie from Chico, California who is a trainer at NorCal, and a great blogger. She has written a cookbook that comes out soon. She is so amazing at making Paleo easy, and down to earth. She even has a podcast that is wonderfully explicative...
"The BOTTOM LINE IS, stick to the basics for this lifestyle, ALWAYS AVOID GLUTEN, and DO eat meat, seafood, veggies, a little bit of fruit, and good fats, but do not make yourself nutty – just eat what makes you feel good, and if you do not feel well, there’s probably something you are eating that’s not paleo – for you!  Continue to educate yourself – listen to Robb Wolf’s podcasts, read books, search the internet – we live in the age of information at our fingertips but the best “science” is how you feel, look and perform."

Paleo does not have to be hard.
I will say this again-- Paleo is really pretty simple, pretty darn basic ya'll!!!

Like Sarah says, once you get your head around it it is really a very simple way to eat... At its purest form its a great Elimination diet to figure out what you body can handle and what it can't... but once you are well, healthy and feeling great- well if you adhere to the biggest basic principles- GLUTEN FREE, you can then start experimenting with what extra yummy foods your body can handle and still be happy!

So take the plunge- try it at is basic core for 30 days, or more if you need, and then start playing with what you can handle adding back in.--- Maybe you can handle dairy??? Well then eat it ya'll!!!
Some corn tortillas or chips sometimes? By all means its gluten free and ok sometimes for many....
Do you want to have some pasta and rice sometimes??? Well just make sure its gluten free and run with it!-
I feed may family homemade pasta, rice that I have pre-soaked, plenty of sweet potatoes- they are super active growing kids, and a perfectly healthy hubbie!!!, for me I need to loose some weight, so I am trying to be a little stricter with carbs right now....
Paleo is NOT A DIET. Its a way to eat, a lifestyle, that lets you feel HEALTHY and HAPPY and WELL!!!!!
